Izvleček:Namen diplomskega dela je bil preučiti vpliv dodatka lucerne (Medicago sativa) kot %prilast% na rastnost, klavno kakovost in kakovost mesa prašičev pitancev. V poskus je bilo vključenih 30 prašičev, ki so bili razdeljeni na kontrolno in testno skupino. Obe skupini sta vseskozi imeli enak krmni obrok, le da je testna skupina v drugi polovici pitanja kot dnevni dodatek dobivala še svežo lucerno. V času poskusa smo beležili porabo krme. Prašiče smo tehtali ob rojstvu in nato še 4- do 5-krat, nazadnje dan pred zakolom. Po zakolu smo izmerili lastnosti klavne kakovosti (maso toplih polovic, debelino mišice in slanine, odstotek mesa v trupu) ter odvzeli vzorce za meritve kakovosti mesa (pH, barva, izceja, trdota, kemijska sestava mesa in maščobnokislinska sestava podkožnega maščobnega tkiva). Rezultati so pokazali, da dodatek lucerne nima vpliva na rastnost, klavno kakovost, večino lastnosti kakovosti mesa in maščobnokislinsko sestavo slanine. Vpliv smo ugotovili le pri barvnem parametru a* (p < 0,05, nižja vrednost) ter tendenco pri izceji vode (p < 0,10, nižja vrednost). Dobljeni rezultati so verjetno posledica majhnih količin zaužite lucerne, saj je bila pokladana kot dodatek k popolnemu krmnemu obroku. Ker lucerna v preučevani količini ni imela negativnega učinka na nobeno izmed preučevanih lastnosti, je primerna za uporabo kot zaposlitveni material za izboljševanje dobrega počutja prašičev.
The aim of the thesis was to study the impact of the alfalfa supplement (Medicago sativa) as "green fodder" on the growth, carcass and meat quality of fattening pigs. Thirty pigs were included in the experiment, divided into the control and test group. Both groups had the same fodder ration throughout the experiment, with the test group receiving fresh alfalfa as a daily supplement during the second half of feeding. Fodder consumption was recorded during the experiment. Pigs were weighed at birth and then 4%5 times, the last time a day before slaughter. After slaughter, the carcass quality (carcass weight, muscle and fat thickness, and meat percentage) were measured and samples taken for the meat quality analysis (pH, colour, water-holding capacity, tenderness, chemical composition of meat, and fatty acid composition of subcutaneous fat). The results showed no effect of alfalfa supplementation on growth, carcass quality, most meat quality traits and the fatty acid composition of fat. The effect was found only for the colour parameter a* (p < 0.05, lower value) and the tendency if the effect for drip loss (p < 0.10, lower value). The results obtained are probably due to the small quantity of alfalfa consumed, as it was added as a supplement to a complete fodder ration. As alfalfa in the studied quantity did not have any negative effect the studied properties, it is suitable for use as enrichment material to improve the welfare of pigs.
